Raw beets and cranberries salad

The beets in my garden are ready to be eaten and I was looking to make a salad with raw beets. I got inspired from this recipe but made a few changes. Ingredients: 2 medium peeled beets • 2 medium peeled fuji apples • handful of dried cranberries, chopped • handful of parsley, chopped • juice from 1.5 lemons • 3 tsp honey • 3 tbs olive oil • salt. Instructions: 1. slice the peeled beets and apples and cut into sticks. You can use a food processor. 2. Add the cranberries and parsley to the beets and apples. 3. Add the lemons juice, honey, olive oil and salt. Mix gently and let it sit for a few minutes. You can add almonds or walnuts if you like. Enjoy.

  1. Wow Toronto is really a different climate than California. Your beets are ready already?
    We normally don't plant until after 24 May in case of frost.
    Cherries, tulips and daffodils just bloomed in the last week.

    1. Hi Lisa, it's so hot for the last couple of weeks, worse than summer. Maybe this is the reason everything is growing like crazy. Strawberries, jalapeños, shishitos, eggplants, squashes, cucumbers, beans and peas. The tomatoes just started and the green tomatoes are growing for a while in their beautiful lantern like shell. Also the herbs are going crazy, we planted some corn and it's almost as tall as I am and two small artichokes. We're new to this and are amazed at the speed everything is growing. I'll keep you posted at what is ready to be eaten. So far we had lettuce salad with herb almost every night for dinner, a few hot peppers, shisitos, strawberries and two beets.
