Easy dinner

We keep our food easy and healthy. We use a lot of olive oil, and fresh ingredients. I would like to share this recipe I found in an old cookbook for a really easy, healthy, yummy zucchini and mint patties:

5 green zucchinis with peel • 2 teaspoons of salt • 1/2 an onion finely chopped • 2 mushed garlic cloves • a pinch of nutmeg • fresh ground black pepper • 2 tablespoons of finely chopped mint • 1/2 a cup of finely chopped parsley or cilantro • 2 eggs • 1 cup of bread crumbs • olive oil for frying

1. Grind the zucchini to a colander. Add the salt and leave for 1/2 an hour. Squeeze liquids out of the zucchinis and transfer to a bowl.
2. Add all other ingredients and 1/2 of the bread crumbs. Put the other half on a flat plate.
3. Make small and flat patties from the mixture, and dip them in the bread crumbs.
4. Heat the olive oil, make sure it's 1/4" high. Brown the patties on both sides, 3-4 minutes on each side.

You can serve with some cold yogurt.

Bon appétit.

Yummy books ; Jam labels

I got two amazing new cooking books, Hand Made by Yvette Van Boven, and Tartine Bread by Chad Robertson and Eric Wolfinger. Both are about a journey to find ones passion for cooking and baking. Tartine Bread is for the more serious bakers who want to experience the ultimate bread baking, it's a really involved and educated process. Hand Made is a fun, what ever you have in your kitchen cooking experience. Recipes from family and friends. I love the hand made feel and look of the book, it's very engaging. ; I made Yvette's favorite Italian bread soup, it's perfect for cold days, and using old bread. ; There are also three jam labels I designed. You can find very interesting jam recipes in Hand Made. ; Happy cooking.

A new look ; A new gift

When Southwestern Law School asked for a new look, I came up with a few ideas. One idea was to include their students and big key words on the front cover, to show the variety in what the school offers. ; A gift from a dear friend that came all the way from Sweden, she said it's a traditional Sweden sock yarn. Thank you. I think I know what I'm going to make.

Scapula wrap

In anatomy, the scapula, omo (Medical Latin), or shoulder blade, is the bone that connects the humerus (upper arm bone) with the clavicle (collar bone). In humans, it is a flat bone, roughly triangular in shape. ; Scapula is a winter shoulder wrap that can be worn in many diff ways. Its long and narrow shape makes it easy to adjust.
