Sugar and cinnamon cookies
Very simple and quick sugar and cinnamon cookies. What you need: 140g soft butter • 1/3 cup (40g) granulated sugar • 1 1/2 cups (200g) all purpose flour • 1/4 tsp cinnamon • 2 tsp pure vanilla extract. To coat the cookies after baking: 1/3 cup (65g) sugar • 1 tsp cinnamon. Cookies: Preheat the oven to 350º. Line baking sheet with parchment paper. • In a large bowl, using an electric mixer beat the butter and granulated sugar until light and fluffy. Add the flour, cinnamon and vanilla. Beat until combined. If dough doesn't come together work it with your hands. • Divide the dough to 26 equal pieces and shape them into small balls. • Place cookies on lined baking sheet and bake for 18 - 20 minutes until golden. • Mix the sugar and cinnamon in a small bowl and roll the hot cookies to coat. • Let them cool and enjoy.
