Perihelion WIP

Perihelion is a looped cowl that is knitted in the fair isle method. 4 cozy layers of 100% merino, for colder days.

The Perihelion is the point in the orbit of a planet, asteroid or comet where it is nearest to the sun. • The word Perihelion stems from the Greek words "peri" (meaning "near") and "helios" (meaning "sun"). • The point in the earth's orbit when it's closest to the sun (147.5 million km) occurs on the 3rd or 4th of January.

Preserved lemons

Home made preserved lemons are so much better than store bought, here is a very simple recipe by the barefoot contessa. To use the lemons in an amazing dish, we made the Moroccan chicken tajine. We added some spices like cinnamon and a lot of vegetables that we cooked with the chicken.

2-3 lemons, 2 tablespoons kosher salt.
1. Preheat the oven to 250 degrees.
2. Cut the lemons into 6th lengthwise, sprinkle with salt and place in a glass dish (make sure it's a non corrosive dish). Cover the lemons with water and cook in the oven for 3 hours.
3. Allow to cool, and then refrigerate.
